Beluga caviar is one of the finest and most valuable of all black caviars in the world. The finest and most expensive of which is the gold caviar. Found primarily in the Caspian Sea and Black Sea Basin, the Beluga is a large fish that belongs to the Sturgeon family. The River Beluga is fresh water fish and spawns on the Volga River, Aral Sea and Don in Russia.
Out high-quality River Beluga Gold Caviar has a distinctly lighter color and richer flavor than the darker black river beluga caviar. The gold roe are the most expensive and rare, with bigger sized eggs that are homogenous in color and size. The pearls have a golden amber color, with firm and elastic membranes with a glistening finish. The exquisitely crisp texture breaks inside the mouth and releases a viscous liquid with rich, creamy consistency.
